Make vegan coffee liqueur for rich and sweet cocktails like White Russians and Coffee Negronis, a perfect Kahlua substitute.
Ingredients:
  • 1 1/2 cups arabica coffee beans, coarsely ground
  • 2 cups aged rum
  • 1 cup vegan dark brown sugar
  • 1 cup water
  • 1/2 teaspoon vanilla extract
Instructions:
  • Combine ground arabica coffee beans and rum in a large mason jar with a tight seal. Gently shake the jar and store in a cool, dark place for three weeks, shaking occasionally.
  • Strain the coffee liqueur mixture through a nut milk bag or a coffee filter, ensuring you squeeze well to get all the liquid out. Discard the coffee beans and reserve the strained liquid.
  • In a small saucepan over medium-high heat, whisk together brown sugar and water until the sugar is completely dissolved and the mixture just starts to boil. Remove from heat and let cool slightly.
  • Enhance the coffee liqueur and store: Whisk vanilla extract into brown sugar simple syrup. Combine the coffee-infused rum with the syrup and stir well. Transfer the liqueur to a clean swing-top bottle, seal, and refrigerate until needed.
