Chewy and traditional homemade English muffins made with bread flour, perfect for breakfast.
Ingredients:
  • 21 ounces white bread flour (4 1/2 cups)
  • 2.25 teaspoons instant dry yeast
  • 2 teaspoons kosher salt
  • 14 ounces lukewarm whole milk
  • 2 tablespoons butter, softened
  • 1 large egg, at room temperature, slightly beaten
  • 0.25 cup semolina, or as needed
Instructions:
  • In a large mixing bowl, combine flour, yeast, salt, milk, sugar, butter, and egg, mixing until a soft dough forms.
  • Place dough on a lightly floured surface and knead for 10 minutes until it becomes soft, smooth, and stretchy.
  • Transfer the dough into a generously oiled bowl. Cover and allow it to rise in a cozy spot until it doubles in size, approximately 1 hour.
  • After deflating the dough, divide it into 16 pieces and shape each into English muffin rings. Dust both sides with semolina and allow them to rest for another 30 minutes.
  • Preheat a griddle or frying pan on low heat. Cook the muffins until a thermometer reads 200 F (93 C), about 7 to 10 minutes per side.
