Homemade English muffins with a soft, chewy texture and plenty of nooks and crannies made from simple pantry ingredients.
Ingredients:
  • 1 cup milk
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 1 (.25 ounce) package active dry yeast
  • 6 cups all-purpose flour
  • 0.25 cup melted shortening
  • 0.25 cup cornmeal, or more as needed
Instructions:
  • Prepare all your ingredients.
  • In a small saucepan, gently heat the milk until it bubbles, then remove from heat. Mix in the sugar until dissolved and let it cool to lukewarm.
  • Combine warm water and yeast in a small bowl and allow it to sit until creamy, approximately 10 minutes.
  • In a large bowl, blend together the milk mixture, yeast mixture, 3 cups flour, and shortening until smooth. Add salt and the remaining 3 cups flour, then knead until a soft dough forms. Transfer the dough to a greased bowl, cover, and allow it to rise in a warm place until doubled in volume, approximately 1 hour.
  • Flatten dough with a quick punch. Roll out on floured surface to 1/2-inch thickness. Use biscuit cutter, glass, or tuna can to cut out rounds.
  • Sprinkle cornmeal on waxed paper. Place dough rounds on top, dust with more cornmeal, cover, and let rise for 30 minutes.
  • Preheat a greased griddle on medium heat.
  • Griddle muffins until golden brown on each side for about 10 minutes. Split, toast as desired, and savor!
