English muffins as crust for delicious mini breakfast pizzas.
Ingredients:
  • 6 English muffins, split in half
  • PAM® Original No-Stick Cooking Spray
  • 0.5 pound Odom's Tennessee Pride® Mild Country Sausage, thawed if frozen
  • 0.5 cup chopped yellow onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped fresh button mushrooms
  • 8 eggs, beaten
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1.5 cups shredded part-skim mozzarella cheese
Instructions:
  • Preheat the broiler. Place English muffin halves on a baking sheet and set aside. Spray a large skillet with cooking spray and heat over medium-high heat. Add sausage, onion, bell pepper, and mushrooms. Cook for 5 minutes until the sausage is crumbled and the vegetables are tender, stirring occasionally. Drain the mixture and keep warm.
  • Lower the heat to medium and crack the eggs into the skillet, then season with salt and black pepper. Let them cook without stirring until the edges and bottom start to firm up. Gently scramble the eggs and continue cooking until fully set.
  • Place English muffin halves under the broiler for 2 minutes or until toasted. Evenly distribute sausage mixture, scrambled eggs, and cheese on the muffin halves. Return to broiler for 3 more minutes, or until cheese is melted. Serve promptly.
