Spicy green chili and English muffin breakfast strata- prep ahead for a brunch favorite with a delicious twist!
Ingredients:
  • 1 (16 ounce) package ground pork sausage
  • 0.25 cup butter, or as needed
  • 1 (12 ounce) package English muffins, split
  • 10 ounces shredded sharp Cheddar cheese, divided
  • 1 (8 ounce) package shredded mozzarella cheese, divided
  • 8 large eggs
  • 1.5 cups sour cream
  • 1 (4 ounce) can chopped green chilies, drained
Instructions:
  • Preheat a large skillet over medium-high heat, then add the sausage. Cook until crumbly, evenly browned, and no longer pink, about 10 minutes. Discard any excess grease.
  • Prepare the baking dish by greasing it lightly.
  • Butter each half of the English muffins and place them in the baking dish. Layer with half of the sausage, Cheddar cheese, and mozzarella cheese.
  • In a large bowl, combine eggs, sour cream, and green chilies and pour over the sausage and cheese layer. Top with the remaining sausage, Cheddar cheese, and mozzarella cheese. Cover and refrigerate for 8 hours.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake the strata in the preheated oven for about 35 minutes until lightly browned and set in the middle. Allow it to stand for 10 minutes before serving.
