Delicious English muffin bread recipe, yields 2 chewy loaves, leavened with yeast and baking soda.
Ingredients:
  • 2 cups milk
  • 0.5 cup water
  • 2 tablespoons cornmeal
  • 6 cups bread flour
  • 2 (.25 ounce) packages active dry yeast
  • 1 tablespoon white sugar
  • 2 teaspoons salt
  • 0.25 teaspoon baking soda
Instructions:
  • Heat the milk and water in a small saucepan until it reaches 125 degrees F/50 degrees C. Grease two 8x4 inch loaf pans lightly and sprinkle cornmeal inside.
  • Combine 3 cups of flour, yeast, sugar, salt, and soda in a large bowl. Add milk and beat until well combined. Gradually mix in 1 cup of flour at a time until a stiff batter forms. Spoon batter into pans, cover, and allow to rise in a warm place for about 45 minutes until nearly doubled in size. Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in a preheated oven until beautifully golden for about 25 minutes. Then, swiftly remove from the pans and allow to cool.
