Quick and easy microwave English muffin bread with optional cinnamon and raisins.
Ingredients:
  • 1 tablespoon yellow cornmeal
  • 0.25 cup warm water (110 degrees F/45 degrees C)
  • 1 (.25 ounce) package active dry yeast
  • 1 cup lukewarm milk
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 0.125 teaspoon baking soda
  • 1 cup whole wheat flour
  • 2 cups all-purpose flour
Instructions:
  • Grease a 9x5-inch microwave-safe loaf pan with a touch of oil and dust with cornmeal for added texture.
  • In a large bowl, combine water and yeast, stirring until dissolved. Mix in milk, sugar, salt, and baking soda. Add whole wheat flour and beat until well combined. Gradually incorporate all-purpose flour until a soft dough forms.
  • Transfer the dough onto a lightly floured surface and knead gently for about 5 minutes until smooth. Shape the dough into a loaf and place it in the prepared pan.
  • Microwave uncovered on 50% power in a 650-watt microwave for 1 minute. Allow to rest for 10 minutes.
  • Allow the loaf to rise until it has doubled in size, repeating Step 4 as needed.
  • Microwave on high for 4 to 6 minutes until the top of the loaf is no longer moist.
  • Take out from the microwave and allow it to rest in the pan for 5 minutes before transferring it to a wire rack to cool completely.
