Indulge in a savory Italian sausage and broccoli strata with English muffins - a delicious and satisfying meal.
Ingredients:
  • 1 lb. bulk Italian pork sausage
  • 2 cups frozen 100% broccoli florets, thawed
  • 1/2 cup chopped red bell pepper
  • 4 to 5 English muffins, split, cut into large cubes (about 5 cups)
  • 6 oz. (1 1/2 cups) finely shredded mild Cheddar cheese
  • 8 eggs
  • 2 1/2 cups milk
  • 1/2 teaspoon dried basil leaves
  • 2 oz. (1/2 cup) shredded fresh Parmesan cheese
Instructions:
  • Prepare a 13x9-inch (3-quart) glass baking dish by spraying it with nonstick cooking spray. Cook sausage in a large skillet over medium heat until no longer pink, stirring frequently. Once cooked, drain the sausage. Next, add broccoli and bell pepper to the skillet and cook for 2 to 3 minutes, stirring occasionally, until the vegetables are crisp-tender.
  • Arrange English muffin cubes in a buttered baking dish, layer with the sausage mixture, and finish with a generous sprinkle of Cheddar cheese.
  • In a large bowl, vigorously beat the eggs before adding the milk, salt, and basil. Mix thoroughly before pouring over the sausage mixture. Sprinkle generously with Parmesan cheese, cover, and refrigerate for a minimum of 4 hours or let it sit overnight.
  • Preheat your oven to 350°F. Bake the uncovered dish for 40 to 45 minutes until a knife inserted in the center comes out clean. Allow it to rest for 5 minutes before serving.
