Whip up a savory sausage, pepper, and cheese casserole with English muffins for a delicious breakfast or brunch!
Ingredients:
  • 1 pound ground country sausage
  • 4 English muffins, halved and torn into bite-sized pieces
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup shredded Cheddar cheese
  • 8 eggs, beaten
  • 1.25 cups milk
  • 1 teaspoon dried basil
  • 0.5 teaspoon black pepper
Instructions:
  • Brown and fully cook the ground sausage in a large skillet over medium-high heat, stirring frequently for about 5 minutes. Remove excess grease.
  • Arrange English muffin pieces in a 9x13-inch baking dish, followed by layers of cooked sausage, onions, bell peppers, and Cheddar cheese.
  • In a bowl, whisk together eggs, milk, basil, and pepper until fully combined. Pour the mixture into a baking dish and gently press down with a spatula. Cover and refrigerate for 8 hours to overnight.
  • Preheat the oven to 375°F (190°C).
  • Bake the uncovered casserole in the preheated oven for about 35 minutes until it's set and the eggs are cooked. To check, insert a knife. Allow it to cool for 15 minutes before serving.
