Sausage French Toast Paninis

Grilled English muffin sandwiches with meat and cheese: a tastier alternative to fast food drive-thru!
Ingredients:
  • 1 package (10 oz) frozen uncooked pork sausage patties (6 patties), thawed
  • 2 eggs
  • 1/2 cup milk
  • 1 tablespoon Dijon mustard
  • 6 English muffins, split
  • 12 slices provolone cheese
  • 6 slices Canadian bacon (3 oz)
Instructions:
  • Preheat the panini pan or contact grill over medium heat for 5 minutes. Flatten the sausage patties into 3 to 4-inch diameters. Cook the sausage for 2 to 3 minutes per side on the panini pan or contact grill until fully cooked. Clean the surface of the pan or grill and spray the top of the panini pan with cooking spray.
  • In a small bowl, whisk together eggs, milk, and mustard until smooth. Dip muffin halves in the egg mixture, ensuring they are thoroughly coated. Place a slice of cheese and a sausage patty on each of 6 muffin halves, then add bacon and another slice of cheese on top. Sandwich with the remaining muffin halves.
  • Place the 3 sandwiches on the panini pan and press them down with a weighted top. Cook for 2 minutes or until they are golden brown. Flip the sandwiches and cook for another 2 minutes until they are browned and heated through in the center. Repeat with the remaining sandwiches. Alternatively, you can cook the sandwiches in a contact grill for 2 to 3 minutes.
