French Toast Sausage Fluffins

French toast inspired fluffy muffins!
Ingredients:
  • 1 (9.6 ounce) box pre-cooked maple flavored pork sausage links
  • 2.75 cups all-purpose flour*
  • 1 (.25 ounce) envelope Fleischmann's® RapidRise Yeast
  • 2 tablespoons sugar
  • 1 cup very warm milk (120 to 130 degrees F)
  • 1 tablespoon Mazola® Corn Oil
  • 1 egg
  • 1 teaspoon Spice Islands® Pure Vanilla Extract
  • 0.5 teaspoon Spice Islands® Ground Saigon Cinnamon
  • 2 tablespoons butter OR margarine, melted
  • Pancake syrup
Instructions:
  • Follow package instructions to reheat sausage, ensuring any excess moisture is removed. Allow to cool on paper towels for 5 minutes, then pat dry. Slice into thin slices and set aside.
  • In a large mixing bowl, combine 1-1/2 cups of flour with the yeast, sugar, and salt. Mix in milk, oil, egg, and vanilla, and beat on medium speed for 2 minutes. Slowly add the remaining 1-1/4 cups of flour until a stiff but slightly sticky dough forms. Gently fold in the sausage, cover the bowl, and allow the dough to rest for 10 minutes.
  • Divide the dough into 12 (2-1/2 inch) greased muffin cups, using a scoop or two spoons (avoid paper liners). Cover and allow it to rise for 35 to 45 minutes until slightly puffy. In a small bowl, mix sugar and cinnamon for the topping; set aside.
  • Preheat oven to 375 degrees F. Bake for 20 to 25 minutes until golden brown. Allow to cool for 2 minutes on a wire rack. Brush with butter and sprinkle with cinnamon sugar. Gently loosen rolls with a knife from the pan. Enjoy warm with pancake syrup, if desired. Store any extras in the fridge.
