Wake up to delicious breakfast treats with your favorite juice and bacon or sausage. Set the festive mood with holiday tunes and enjoy a filled table.
Ingredients:
  • 1/2 cup mascarpone cheese (from 8-oz container)
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 2 eggs
  • 1/4 cup milk
  • 8 slices soft multigrain bread, crusts removed
  • 1 to 1 1/2 cups fresh raspberries
  • 3 tablespoons butter
  • Additional raspberries, mint leaves and maple syrup, if desired
Instructions:
  • In a small bowl, whip the cheese and 1 tablespoon of sugar with an electric mixer on high speed until smooth. In another small bowl, combine the remaining 3 tablespoons of sugar and cinnamon; set aside.
  • Whisk together eggs and milk until fully blended in a glass loaf pan or shallow dish.
  • Flatten each bread slice to 1/4 inch thickness on a work surface. Spread 1 tablespoon of the cheese mixture on each slice. Arrange 4 to 6 raspberries on one long edge of each slice, then tightly roll them up. Dip each roll-up individually in the egg mixture.
  • In a large nonstick skillet, melt 2 tablespoons of butter over medium heat. Place 4 roll-ups seam side down in the skillet and cook for 2 to 4 minutes, turning occasionally until they are golden brown on all sides. Roll them immediately in cinnamon-sugar. Repeat with the remaining 1 tablespoon of butter and 4 roll-ups. Garnish with raspberries and mint leaves before serving with syrup.
