Indulge in a decadent breakfast treat with layers of eggs, bread, and fresh berries - a delightful strata recipe.
Ingredients:
  • 3 cups assorted fresh berries, such as blueberries, raspberries or cut-up strawberries
  • 1 tablespoon granulated sugar
  • 4 cups cubes (3/4 inch) whole wheat bread (about 5 slices)
  • 1 1/2 cups fat-free egg product or 6 eggs
  • 1/2 cup fat-free (skim) milk
  • 1/2 cup fat-free half-and-half
  • 2 tablespoons honey
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon powdered sugar, if desired
Instructions:
  • Combine the fruit and granulated sugar in a medium bowl, allowing the flavors to meld together as you prepare the rest of the recipe.
  • Preheat oven to 350°F and generously spray 12 regular-size muffin cups with cooking spray. Evenly distribute bread cubes among the muffin cups.
  • In a large bowl, whisk all ingredients except powdered sugar until fully combined. Pour the mixture over the bread cubes, pressing down gently with a spoon to ensure the bread is soaked. If there is leftover mixture, let it sit for up to 10 minutes, gradually adding it as the bread absorbs it.
  • Bake for 20 to 25 minutes until centers are set. Let it cool for 5 minutes, then remove from muffin cups. Place 2 stratas on each of 6 plates. Top each strata with fruit mixture and sprinkle with powdered sugar. Enjoy!
