Tiny blueberries bursting with intense super berry flavor!
Ingredients:
  • 4 eggs
  • 169.95 gm milk
  • 2.50 gm ground cinnamon
  • 25g butter
  • 8 slices thick white bread
  • 250.00 ml Greek Style Yoghurt
  • 125g blueberries
  • 125g strawberries, hulled, finely diced
  • 54.00 gm maple syrup
Instructions:
  • Preheat your oven to 150°C/130°C fan-forced and line a large tray with baking paper.
  • Create a vibrant salsa by tossing together fresh blueberries, strawberries, and a hint of sweet maple syrup in a mixing bowl.
  • Combine eggs, milk, and cinnamon in a shallow dish and whisk until smooth.
  • In a large frying pan over medium heat, melt a quarter of the butter. Dip 2 slices of bread in the egg mixture until soaked, then shake off excess. Cook the bread for 2 to 3 minutes on each side until golden. Transfer to a prepared tray and keep warm in the oven. Repeat with the remaining slices of bread, egg mixture, and butter.
  • Plate the toasts evenly among the plates. Generously spoon creamy yogurt and vibrant berry salsa on top. Present and enjoy!
