French toast with strawberries, blackberries and sweet mascarpone

Indulge in a delicious berry French toast for a special treat.
Ingredients:
  • 1 x 250g pkt mascarpone
  • 45g (1/4 cup) icing sugar mixture, sifted
  • 250g (1 punnet) strawberries, washed, hulled, larger ones cut in half
  • 200g (1 punnet) blackberries
  • 180ml (3/4 cup) milk
  • 2 eggs, lightly whisked
  • 80g butter, chopped
  • 6 thick slices crusty white bread
  • 40.00 gm caster sugar
Instructions:
  • In a medium bowl, mix mascarpone and icing sugar until well combined. Cover with plastic wrap and chill in the fridge until needed.
  • Mix the strawberries and blackberries together in a large bowl and set aside for later use.
  • In a large bowl, combine the milk and eggs, whisking with a fork until well mixed.
  • In a large non-stick frying pan over medium-high heat, melt half of the butter until foaming. Dip bread pieces one by one in the egg mixture and place in the pan. Cook 3 pieces at a time for 2 minutes on each side until golden brown. Transfer to a plate and continue with the rest of the butter, bread, and egg mixture.
  • Presentation is key - arrange bread on plates and generously sprinkle with sugar. Finish by adding a luxurious dollop of mascarpone and a handful of fresh berries on top.
