Chai French toast with caramel sauce and strawberries.
Ingredients:
  • 450g loaf Vienna bread
  • 4 eggs
  • 257.50 gm milk
  • 166.65 gm pure cream
  • 8.80 gm vanilla extract
  • 1.25 gm mixed spice
  • 1/4 tsp ground cardamom
  • 0.63 gm ground ginger
  • Pinch of ground cloves
  • Pinch of ground black pepper
  • 239.40 gm brown sugar
  • 120g butter
  • 250g sliced strawberries, to serve
  • 83.33 gm double thick cream, to serve
  • Icing sugar, to serve
Instructions:
  • Prepare the bread by trimming the ends and cutting the loaf into 8 slices that are 2cm thick. In a bowl, whisk together eggs, milk, 1/2 cup pure cream, vanilla, and spices. Arrange the bread slices in a single layer in a large glass or ceramic dish. Pour the egg mixture evenly over the bread and make sure to coat each slice by turning them over. Cover the dish with plastic wrap and refrigerate for 1 hour before cooking.
  • Preheat your oven to 180C (160C fan-forced).
  • In a small saucepan over low heat, melt brown sugar and butter together, stirring constantly for 3 to 4 minutes until fully combined. Quickly spread this sweet mixture onto the base of a 34cm x 38cm non-stick baking tray with sides.
  • Place the soaked bread slices in a single layer on top of the sugar mixture on the tray. Bake for 22 to 25 minutes until the bread is golden and the sugar has caramelized. Let it stand for 2 minutes, then carefully transfer the toast, caramelized-side up, onto serving plates.
  • Transfer the caramel mixture into a frying pan over gentle heat. Stir consistently for 1 to 2 minutes until it is smooth and melted. Pour in the rest of the pure cream and stir for another minute until the mixture slightly thickens.
  • Drizzle toast with luscious caramel sauce, layer on fresh strawberries and silky double cream, then sprinkle with a snowfall of icing sugar. Enjoy immediately.
