A perfect recipe for kicking off your weekend!
Ingredients:
  • 2 eggs
  • 80ml (1/3 cup) milk
  • Melted butter, to grease
  • 4 slices raisin bread
  • 125ml (1/2 cup) thickened cream
  • 12.00 gm icing sugar mixture
  • 1.25 gm ground cinnamon
  • 1 x 250g punnet strawberries, washed
  • Espresso coffee, to serve
Instructions:
  • Preheat your oven to 160°C. Whisk eggs and milk together using a fork in a medium bowl.
  • 1. Preheat a non-stick frying pan over medium heat and brush with melted butter to coat lightly. Dip one slice of bread in the egg mixture to coat evenly. Cook each side for about 2 minutes, or until golden brown. Transfer to a baking tray and keep warm in the oven. Repeat this process for the remaining batches, greasing and reheating the pan between each round.
  • Whisk cream, icing sugar, and cinnamon with a balloon whisk until soft peaks form.
  • Halve the toast and distribute it onto plates. Spread with cinnamon cream, add strawberries, and serve alongside espresso.
