Indulge in a scrumptious berry baked French toast, a delightful treat for berry enthusiasts.
Ingredients:
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1 1/2 cups milk
  • 1/4 cup sugar
  • 2 teaspoons vanilla
  • 6 eggs
  • 1 loaf (1 lb) soft French bread, cut into 1-inch cubes (8 cups)
  • 1 1/2 cups Cascadian Farm® frozen organic harvest berries or blueberries (from two 10-oz bags)
  • 1/2 cup sugar
  • 1 1/2 teaspoons cornstarch
  • 2 tablespoons orange juice
  • 1 cup Cascadian Farm® frozen organic harvest berries or blueberries
  • 1 1/2 cups fresh strawberries, cut in half
Instructions:
  • Butter a 13x9-inch (3-quart) glass baking dish generously. In a large bowl, whisk together flour, milk, 1/4 cup sugar, vanilla, salt, and eggs until smooth. Gently fold in bread and 1 1/2 cups berries. Transfer the mixture into the baking dish, cover tightly, and refrigerate for at least 1 hour, but not more than 24 hours.
  • Preheat oven to 400°F. Bake the uncovered bread mixture for 25 to 35 minutes until it turns golden brown and a knife inserted in the center comes out clean.
  • In a 1 1/2-quart saucepan, combine 1/2 cup sugar and cornstarch. Add orange juice and mix until smooth. Gently stir in 1 cup berries and bring to a boil over medium heat, stirring constantly. Cook for about 4 minutes until slightly thickened, then remove from heat. Right before serving, add strawberry halves. Pour warm mixture over French toast bake and enjoy.
