Indulge in baked French toast with juicy berries on top.
Ingredients:
  • 8 eggs
  • 12 cups cubed (1 inch) soft French bread (about 13 oz)
  • 3 cups half-and-half
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1/4 cup orange juice
  • 1 bag (12 oz) frozen unsweetened mixed berries
  • 3 cups fresh strawberries, cut into quarters
Instructions:
  • Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Spread the bread cubes evenly in the dish. In a large bowl, whisk together eggs, half-and-half, 1/4 cup sugar, cinnamon, salt, and vanilla until smooth. Pour the mixture over the bread cubes. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, but no longer than 24 hours.
  • Preheat oven to 400°F and bake uncovered for 25 to 35 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
  • In a 2-quart saucepan, blend 1 cup of sugar with cornstarch. Add orange juice and mix until smooth. Stir in mixed berries. Heat over medium heat until boiling, stirring constantly. Continue cooking for about 6 minutes until the topping slightly thickens. Remove from heat.
  • Right before serving, gently fold in fresh strawberries into the delicious topping. Drizzle warm over the exquisite French toast bake.
