Indulgent French toast bake bursting with creamy cheese, zesty lemon, and plump blueberries for a refreshing and decadent spring treat.
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 6 tablespoons sugar
  • 2 tablespoons grated lemon peel
  • 10 slices (1/2 inch thick) challah
  • 2 cups blueberries
  • 8 eggs
  • 2 cups whole milk
  • 1 cup heavy whipping cream
Instructions:
  • Gently coat a 13 x 9-inch (3-quart) baking dish with butter.
  • In a medium bowl, use an electric mixer to beat together the cream cheese, 3 tablespoons of sugar, and 1 tablespoon of lemon peel until smooth and creamy. Spread this delicious mixture generously over 5 slices of challah. Gently press some blueberries onto the cream cheese layer, then top each with another slice of challah to create scrumptious cream cheese and blueberry sandwiches. Arrange 4 sandwiches in a baking dish, and cut the remaining sandwich into pieces to fill in any empty spaces between them.
  • In a large bowl, whisk together eggs, 3 tablespoons sugar, 1 tablespoon lemon peel, milk, and cream until smooth. Pour this mixture over the challah in a casserole dish, then sprinkle with the remaining blueberries. Cover with plastic wrap and refrigerate for 1 to 12 hours.
  • Remove dish from refrigerator 30 minutes prior to baking to bring it to room temperature. Preheat oven to 350°F. Bake until puffed and golden, about 40 minutes. Allow to cool on a rack for 15 minutes before serving.
