Whip up homemade chewy granola bars with your ideal mix of dried fruit, nuts, and seeds. Enjoy this simple, nutritious, gluten-free treat now!
Ingredients:
  • 1 1/2 cups old fashioned oats
  • 1/2 cup oat flour (or 1/2 cup old fashioned oats pulsed in a food processor until finely ground)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 3/4 cup raw almonds, rough chopped
  • 3/4 cup raw pumpkin seeds
  • 1/2 cup dried cherries, rough chopped
  • 1/2 cup unsweetened coconut flakes
  • 1/3 cup creamy almond butter
  • 1/3 cup coconut oil
  • 1/2 cup honey
  • 2 tablespoons corn syrup
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 325°F and line a 9x9 inch baking pan with parchment paper, leaving overhang on 2 opposite sides to create a "sling" for easy removal of the bars after cooling.
  • In a large bowl, mix the oats, oat flour, salt, and cinnamon until thoroughly combined to create the dry mixture.
  • Combine the chopped almonds, pumpkin seeds, chopped dried cherries, and unsweetened coconut flakes (or 2 1/2 cups of your preferred mix-ins) into the bowl with the oats.
  • Combine almond butter, coconut oil, honey, and corn syrup in a small saucepan over medium heat. Bring to a simmer while stirring occasionally. Simmer for 1 minute, stirring constantly to avoid burning the nut butter. Remove from heat and mix in the vanilla extract.
  • Pour the wet ingredients over the oat mixture and fully coat using a rubber spatula. Transfer the granola mixture to the parchment-lined baking pan. Press and spread the mixture evenly into the pan using your hands, then firmly press it down with the bottom of a cup to make it even, flat, and compact. Remove the top piece of parchment paper.
  • Bake granola bars until the edges are lightly golden, about 25 minutes.
  • Allow the pan to cool on a rack for 30 minutes before placing it in the refrigerator, uncovered, for an additional 30 minutes.
  • Cut and enjoy: With the help of the parchment sling, move the granola to a cutting board. Slice into 12 bars using a chef’s knife (make one cut down the center and 5 cuts across).
