Homemade chewy chocolate granola bars straight from your oven - better than store-bought!
Ingredients:
  • 2 cups rolled oats
  • 0.5 cup flax seed meal
  • 0.5 cup sliced almonds
  • 0.5 cup unsweetened shredded coconut
  • 0.25 cup chia seeds
  • 0.5 cup honey
  • 0.25 cup firmly packed brown sugar
  • 2 tablespoons coconut oil
  • 1 teaspoon coconut extract
  • 1 teaspoon ground cinnamon
  • 5 tablespoons unsweetened cocoa powder
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch square baking dish.
  • Evenly scatter rolled oats, flax seed meal, sliced almonds, shredded coconut, and chia seeds on a baking sheet.
  • Toast the oats mixture in the preheated oven, giving it a stir every 5 minutes, until it's lightly toasted, approximately 15 minutes.
  • Lower the oven temperature to 300 degrees F (150 degrees C).
  • In a saucepan over medium-low heat, melt together honey, brown sugar, coconut oil, vanilla extract, coconut extract, cinnamon, and salt until the sugar dissolves completely, about 3 minutes. Stir in cocoa powder until fully incorporated.
  • Combine the toasted oat mixture with the honey mixture in a large bowl, stirring until all dry ingredients are evenly coated. Spread the mixture into the prepared baking dish and press it into an even layer.
  • Bake until beautifully golden, about 18 to 20 minutes in preheated oven.
  • Let the bars cool in the pan for 10 minutes, then cut into squares and remove them promptly.
