Thai Coconut and Cocoa Macaroons

Inventive Thai macaroons with coconut, cocoa, and zesty lime for a unique treat.
Ingredients:
  • 2 large egg whites
  • 0.5 cup white sugar
  • 1 teaspoon lime juice
  • 1 (7 ounce) package toasted flake coconut
  • 1 tablespoon unsweetened cocoa powder
Instructions:
  • Preheat the oven to 300°F (150°C).
  • In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add sugar, beating until soft peaks form. Test by lifting your beater or whisk straight up: soft mounds should form. Add salt and lime juice, then beat until stiff peaks form that hold their shape. Gently fold in coconut and cocoa powder.
  • Spoon mixture onto lined baking sheets and bake until golden brown and firm to the touch, around 20 minutes. Allow to cool on wire racks before transferring to an airtight container.
