Homemade Hot Sauce

Create a zesty homemade hot sauce similar to Cholula® with vinegar, dried peppers, and salt.
Ingredients:
  • 1 cup white vinegar
  • 9 dried pequin peppers, seeded
  • 4 dried arbol peppers, seeded
  • 6 cloves garlic, minced
  • 2 tablespoons ground paprika
  • 1 tablespoon onion flakes
  • 2 tablespoons cold water
  • 0.25 teaspoon xanthan gum
Instructions:
  • In a small saucepan over medium heat, simmer 1 cup of water with vinegar, pequin peppers, arbol peppers, garlic, paprika, onion flakes, and salt until it reaches 180°F (82°C). Blend the mixture until smooth, then cool in the blender for about 15 minutes at room temperature.
  • In a small bowl, mix 2 tablespoons of cold water with xanthan gum. Pour the mixture into a blender with the pepper mixture and blend for 30 seconds. Transfer the puree into a bottle and refrigerate for up to 9 months.
