Elevate your burgers with this easy homemade ketchup recipe for perfect summer grilling.
Ingredients:
  • 1 medium (1 cup) yellow onion
  • 1/2 teaspoon olive oil
  • 3 teaspoons salt, divided
  • 1/4 teaspoon ground clove
  • 1 teaspoon ground cinnamon
  • 1 teaspoon sweet paprika
  • 2 tablespoons granulated sugar
  • 3 ounces tomato paste
  • 2 tablespoons honey
  • 2/3 cup plus 2 tablespoons red wine vinegar, divided
  • 1 (14 ounce) can crushed tomatoes
Instructions:
  • Prepare the onions: Cut the onion into medium-sized pieces and transfer to a medium bowl.
  • In a Dutch oven or 3-quart sauté pan over medium heat, warm olive oil. Add onions and 1 teaspoon of salt. Cook until translucent, about 10 minutes. Reduce heat to medium-low, add clove, cinnamon, and sweet paprika. Stir for 1 minute to coat the onions. Add sugar and 1 teaspoon of salt, stir until sugar melts, about 30 seconds. Stir in tomato paste and honey for 2 minutes until mixture resembles shiny BBQ sauce. You can sneak a taste at this point, I won't tell anyone.
  • Pour in the red wine vinegar and crushed tomatoes into the Dutch oven. Lower the heat to low and cover with a lid slightly ajar to prevent splatter. Simmer for 20-25 minutes, stirring occasionally.
  • Combine ketchup in a large bowl then blend in batches until smooth and bright red, resembling a ribbony pudding. Pour the mixture back into the Dutch oven.
  • Enhance ketchup: Stir in the remaining 1 teaspoon of salt and 2 tablespoons of red wine vinegar. Simmer gently for 5 minutes until rich and vibrant. Let it cool for 20-30 minutes until perfectly thickened and deeply colored.
  • Transfer the flavorful ketchup into a glass jar or plastic container, refrigerate for up to one month, and enjoy right away.
