Try a unique twist by swapping tomatoes for blueberries in a homemade ketchup alternative.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 small onion, diced
  • 1 tablespoon grated fresh ginger root
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon celery seed
  • 2 cups blueberries
  • 0.25 cup packed brown sugar
  • 2 tablespoons balsamic vinegar
Instructions:
  • In a saucepan over medium-high heat, saute onion, garlic, and ginger in vegetable oil until the onion is translucent, about 5 to 7 minutes.
  • Combine salt, cinnamon, cloves, cumin, cayenne pepper, and celery seed into the onion mixture. Cook and stir occasionally until the onion is fully softened, for an additional 2 to 3 minutes.
  • Combine juicy blueberries and rich brown sugar with the savory onion mixture. Gently mash the berries as they simmer for about 10 minutes until they are fully softened.
  • Use an immersion blender to blend the blueberry mixture until smooth. Stir in balsamic vinegar and simmer on low heat until thickened to your preference, about 10-15 minutes.
