Festive mini cinnamon rolls with customizable fillings, ideal for holiday brunch.
Ingredients:
  • 0.75 cup milk
  • 0.25 cup water
  • 4 cups bread flour or all-purpose flour
  • 0.33 cup sugar
  • 1 (.25 ounce) package active dry yeast
  • 0.5 teaspoon salt
  • 2 large eggs, lightly beaten
  • 0.33 cup butter, melted
  • 0.66 cup brown sugar
  • 1.5 teaspoons cinnamon
  • 4 tablespoons butter, softened
  • 3 ounces cream cheese, softened
  • 1 tablespoon butter, softened
  • 1 tablespoon milk
  • 0.5 teaspoon vanilla extract
  • 2 cups powdered sugar
Instructions:
  • Combine milk and water in a glass measuring cup for the dough. Microwave until the mixture reaches 105-115°F (40-46°C), about 30-60 seconds.
  • Combine flour, sugar, yeast, and salt in a large bowl. Mix in eggs, melted butter, and milk. Use an electric mixer on medium speed until a soft dough forms and pulls away from the bowl (3 to 5 minutes). (Dough will be sticky.) Grease a bowl, transfer dough, and chill covered until easy to handle, at least 2 hours or up to overnight.
  • Prepare two 9-inch round cake pans or two 8x8-inch baking pans by greasing them.
  • In a small bowl, combine brown sugar and cinnamon. Press down on the dough and divide it in half. Roll out one portion on a lightly floured surface into a 6x16-inch rectangle. If the dough bounces back, let it rest for 5 to 10 minutes. Spread 2 tablespoons of softened butter over the dough, then sprinkle half of the cinnamon-brown sugar mixture on top. Gently press the mixture into the dough.
  • Roll the dough tightly from one long side to the other, ensuring a seamless seal. Cut the rolled dough into 16 pieces, each about 1-inch thick. Place the cut-side down rolls in one of the prepared pans, then repeat the process with the rest of the dough, cinnamon-sugar, and softened butter. Cover and let the rolls rise in a warm place until they almost double in size, approximately 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake the rolls until they are beautifully golden brown, which should take around 17 to 22 minutes. Allow them to cool in the pan on a wire rack for 10 minutes.
  • Make the icing by combining cream cheese, softened butter, milk, and vanilla in an electric mixer. Beat at medium speed for 1 to 2 minutes until creamy. Gradually mix in powdered sugar until smooth. Drizzle the rolls with the icing and serve them warm.
