Elevate mini quiches with tangy beetroot relish.
Ingredients:
  • 24 Patties Vegetarian Quiches Spinach & Feta
  • 9.20 gm olive oil
  • 1/2 small red onion, finely chopped
  • 250g cooked baby beetroot, peeled, coarsely grated
  • 20.00 ml red wine vinegar
  • 20.00 gm caster sugar
  • 11.80 gm wholegrain mustard
  • Baby beetroot leaves, to serve
Instructions:
  • Prepare the Patties Quiches according to the instructions on the packet.
  • In a small saucepan over medium heat, sauté the onion in oil for 5 minutes until softened.
  • Combine the beetroot, vinegar, and sugar in a pan and cook for 5 minutes, stirring regularly until the liquid is absorbed. Mix in the mustard, season to taste, and allow it to cool.
  • To serve, plate the Patties Spinach & Feta Quiches alongside a dollop of beetroot relish and a sprinkle of beetroot leaves for an elegant presentation.
