Try our easy Mediterranean Quiche: slow-cooked with spinach, sausage, red bell peppers, and feta cheese, ideal for a tasty brunch!
Ingredients:
  • 8 eggs
  • 1 cup Original Bisquick™ mix
  • 2 cups chopped fresh spinach
  • 1 1/2 cups crumbled feta cheese (6 oz)
  • 1/2 cup chopped roasted red bell peppers and/or sun-dried tomatoes
  • 1/4 cup chopped fresh basil leaves
  • 1 teaspoon finely chopped garlic
  • 1 package (9.6 oz) fully cooked sausage crumbles
  • 1/4 cup crumbled feta cheese for garnish, if desired
Instructions:
  • Grease a 4- to 5-quart slow cooker with cooking spray. Whisk together eggs, milk, and Bisquick mix in the slow cooker until well combined. Mix in spinach, 1 1/2 cups feta cheese, bell peppers, basil, garlic, and sausage until evenly distributed.
  • Cover and cook on High heat for 3-4 hours or on Low heat for 5-6 hours, until the center is set and the edges are deep golden brown.
  • Serve by cutting into pieces and sprinkling each portion with feta cheese for a delicious finishing touch.
