Delicious quiche with creamy feta, fresh spinach, and seed bread crust.
Ingredients:
  • 1 Cape Seed Loaf
  • olive oil cooking spray
  • 2 bunches English spinach, trimmed, rinsed
  • 200g feta cheese, crumbled
  • 3 green onions, chopped
  • 8 eggs
  • 126.25 gm thickened cream
Instructions:
  • Preheat your oven to 180°C and generously grease a 4cm deep, 16cm x 26cm (base) slab pan.
  • Slice the loaf into eight 1.5cm-thick slices. Flatten each slice with a rolling pin until they are 5mm thick. Spray both sides of the slices with oil.
  • Line the pan with sliced bread, allowing them to slightly overlap. Bake for 10 minutes or until the bread is lightly toasted.
  • Place half of the spinach in a microwave-safe dish, cover, and microwave on HIGH for 1 1/2 to 2 minutes until just wilted. Drain and repeat with the remaining spinach. Squeeze out excess moisture with your hands, then roughly chop.
  • Evenly layer spinach on top of the bread. Sprinkle with feta and green onion. In a large bowl, thoroughly whisk together eggs, cream, salt, and pepper. Pour the mixture over the spinach. Bake for 35 to 40 minutes until fully cooked. Slice and enjoy!
