Ingredients:
  • 30g butter
  • 10 to 12 slices white bread, crusts removed
  • 150.00 gm self-raising flour
  • 5 eggs
  • 250.00 gm water
  • 250.00 ml grated tasty cheese
  • 250g packet frozen spinach, thawed, well drained
Instructions:
  • Prepare a 24cm (base) x 28cm (top) heavy-based frying pan by lightly greasing it. Butter one side of each piece of bread. Line the base and sides of the frying pan with the bread, placing the buttered side down, trimming to fit, and overlapping where needed.
  • In a large bowl, sift the flour and make a well in the center. In a separate jug, whisk the eggs and water together with a fork. Slowly incorporate the egg mixture into the flour. Mix in the cheese, spinach, onion, salt, and pepper until well combined.
  • Pour the spinach mixture over the bread and use a spatula to smooth the top. Partially cover the frying pan with a lid and cook over medium-low heat for 20 minutes, or until the spinach mixture is almost set.
  • Preheat grill on high. Grill the frying pan for 4 minutes until set in the center and golden on top. Slice and serve with salad for a satisfying lunch or dinner.
