Spinach Pie

Quick and delicious breakfast pie, resembling a quiche.
Ingredients:
  • 2 tablespoons chopped onion
  • 1 (16 ounce) package frozen chopped spinach, thawed and drained
  • 3 eggs
  • 1.5 cups heavy cream
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup shredded Swiss cheese
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously coat a 9-inch pie pan with non-stick cooking spray.
  • In a large saucepan over medium-high heat, melt 2 tablespoons of butter until sizzling. Cook onions until soft, then add spinach with squeezed water. Heat through until excess water evaporates. Transfer mixture to a pie pan.
  • Combine eggs and cream in a large bowl until smooth. Mix in salt, pepper, and nutmeg. Transfer mixture to a pie pan and sprinkle with shredded Swiss cheese. Dot the top with 1 tablespoon of butter.
  • Bake until perfectly set and beautifully golden brown, about 25 to 30 minutes. Allow to cool for 5 minutes before serving.
