Spinach impossible pie

Indulge in a budget-friendly, rich, and satisfying vegetarian spinach pie.
Ingredients:
  • 1 bunch English spinach, trimmed
  • 18.20 gm olive oil
  • 4 green onions, thinly sliced
  • 20.00 ml chopped fresh dill
  • 100g feta, crumbled
  • 125.00 ml Dairy Cheese Tasty
  • 4 Free Range Eggs
  • 75.00 gm self-raising flour
  • 386.25 gm milk
  • Mixed salad, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Lightly grease a 4 cup-capacity, 23cm (base) pie dish and place it on a baking tray. Wash the spinach, pat it dry with paper towel, and roughly chop it. Heat 1 teaspoon of oil in a large deep frying pan over medium heat. Add the spinach and cook, stirring, for 2 minutes or until wilted. Transfer the spinach to a plate and let it cool for 20 minutes while you prepare the remaining ingredients.
  • In a pan heated over medium heat, add the onion and sauté until softened, about 1 minute. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Transfer to a bowl.
  • Place spinach in a sieve and press out excess liquid using the back of a large spoon. Stir in dill, feta, and tasty cheese with the onion mixture. Spoon the mixture over the base of the prepared dish.
  • In a jug, combine eggs and flour until slightly lumpy. Slowly incorporate milk while whisking. Pour egg mixture over spinach. Bake until puffed, golden, and firm (30-35 minutes). Cut into wedges and serve with salad.
