Impossibly Easy Spinach Parmesan Pie

Irresistible Greek spinach pie for spinach skeptics!
Ingredients:
  • 4 medium green onions, sliced
  • 2 garlic cloves, finely chopped
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain
  • 1/2 cup small curd creamed cottage cheese
  • 1/2 cup Original Bisquick™ mix
  • 1 cup milk
  • 1 teaspoon lemon juice
  • 1/4 teaspoon pepper
  • 3 tablespoons grated Parmesan cheese
Instructions:
  • Preheat oven to 350°F and grease a 9-inch pie plate. In a 10-inch skillet over medium heat, melt butter. Saute onions and garlic in the butter for 2 to 3 minutes until onions are tender. Add spinach and spread mixture in the pie plate. Top with cottage cheese.
  • Combine Bisquick mix, milk, lemon juice, pepper, and eggs until well mixed. Transfer the mixture into a pie plate and top it off with a sprinkle of Parmesan cheese and nutmeg.
  • Bake for approximately 35 minutes or until a knife inserted in the center comes out clean. Allow to cool for 5 minutes, then garnish with extra sliced green onions, if desired.
