Simplify brunch with this Impossibly Easy eggs Florentine casserole. Spinach, roasted red peppers, mozzarella, Parmesan, and eggs baked to perfection. Topped with fresh tomatoes and rich Hollandaise. Ingredients:
  • 1 1/4 cups Original Bisquick™ mix
  • 2 cups milk
  • 12 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 4 cups lightly packed fresh baby spinach
  • 1 cup diced jarred roasted red bell peppers, patted dry (12-oz jar)
  • 2 cups shredded mozzarella cheese (8 oz)
  • 1 cup shredded Parmesan cheese (4 oz)
  • 1 package (1.25 oz) hollandaise sauce mix
  • 1/3 cup diced tomato
Instructions:
  • Preheat the oven to 400°F. Grease a 13x9-inch (3-quart) glass baking dish. In a large bowl, whisk together Bisquick™ mix, milk, 4 eggs, 3/4 teaspoon of salt, and red pepper until well combined. Add spinach, bell peppers, and cheeses, then pour into the baking dish.
  • Bake uncovered for 25 minutes. Grease the bottom of a metal 1/4 cup measuring cup or bottom of a small (2-inch diameter) glass with cooking spray. Gently create 8 wells in the partially baked mixture in the baking dish. Crack one egg into each well and sprinkle with the remaining 1/4 teaspoon of salt. Bake for an additional 12 to 16 minutes or until yolks are cooked to your liking. Let it cool for 5 minutes before serving.
  • Prepare hollandaise sauce following package instructions. Pour 1/2 cup of sauce over the casserole and garnish with a sliced tomato. Serve the remaining sauce on the side.
