Impossibly Easy Coconut Pie

Quick and legendary crustless coconut pie from Bisquick™ and Betty Crocker™ fans. Easy one-bowl dessert ready in 10 minutes. Just mix coconut, sugar, Bisquick™, butter, milk, and eggs, then bake. Deliciously simple!
Ingredients:
  • 1 cup flaked or shredded coconut
  • 3/4 cup sugar
  • 1/2 cup Bisquick™ Original Pancake & Baking Mix
  • 1/4 cup butter, melted
  • 1 3/4 cups milk
  • 1 1/2 teaspoons vanilla
  • 4 eggs, slightly beaten
Instructions:
  • Preheat oven to a perfectly warm 350°F, and generously grease a 9-inch pie plate with either shortening or a quick spritz of cooking spray.
  • Combine all ingredients in a medium bowl using a fork or wire whisk until well blended. Place a pie plate on a cookie sheet and pour the filling into the pie plate. Transfer the filled pie plate on the cookie sheet into a preheated oven.
  • Bake for 45 to 50 minutes until golden brown and a knife inserted in the center comes out clean. Allow to cool for 1 hour before serving. Refrigerate any leftover pie.
