"Impossible" coconut pie

Foolproof tropical sweet pie dessert, irresistibly delicious.
Ingredients:
  • 4 eggs
  • 225g (1 cup) caster sugar
  • 100g unsalted butter, softened
  • 100g slivered almonds
  • 85.00 gm desiccated coconut
  • 40.00 ml grated lemon rind
  • 40.00 ml grated orange rind
  • 125ml (1/2 cup) lemon juice
  • 125ml (1/2 cup) orange juice
  • 250ml (1 cup) coconut milk
  • 125.00 ml plain flour, sifted
  • Lightly whipped cream, to serve
  • Fresh passionfruit pulp, to serve
Instructions:
  • Preheat your oven to 180 degrees Celsius.
  • Combine eggs, sugar, butter, almonds, coconut, lemon and orange rind and juice, coconut milk, and flour in a food processor until smooth. Transfer the mixture to a buttered 28cm pie plate. Bake for 1 hour until lightly browned. Let it cool, then refrigerate for 1 hour before serving.
  • Top with a dollop of whipped cream and fresh passionfruit before serving.
