Lemon curd impossible pie recipe

Make quick and easy lemon curd in the microwave for a delightful dessert.
Ingredients:
  • 250ml (1 cup) coconut milk
  • 100g butter, melted
  • 200.00g (1 ⁄2 cup) caster sugar
  • 75g (1 ⁄2 cup) plain flour
  • 85g (1 cup) desiccated coconut
  • 2 x 300ml ctn double cream
  • Pure icing sugar, to dust
  • 2 eggs
  • 85g butter, melted, cooled
  • 160ml (2⁄3 cup) fresh lemon juice
  • 2 tsp finely grated lemon rind
Instructions:
  • In a large microwave-safe bowl, whisk together all ingredients for the curd. Microwave on Medium heat, stirring every minute, for 4 minutes or until the mixture is smooth and thick. Allow it to cool before using.
  • Preheat the oven to 170°C/150°C fan forced. Grease a 23cm round ovenproof dish. Combine eggs, milk, butter, caster sugar, flour, and coconut, whisking until smooth.
  • Pour the pie mixture into the prepared dish, then randomly dollop teaspoonfuls of the reserved 1⁄4 cup lemon curd on top.
  • Gently swirl the curd dollops with a bamboo or metal skewer to create a marble effect in the pie mixture.
  • Bake the pie for 45 minutes or until a skewer inserted into the center comes out clean. Let it cool for 10 minutes before serving.
  • Whisk cream in a bowl until soft peaks form using a balloon whisk. Fold in the remaining curd to create a beautiful ripple effect, then dollop onto the pie and dust with icing sugar for a finishing touch.
