Quick and simple impossible coconut pie with a creamy custard filling and chewy coconut topping.
Ingredients:
  • 2 cups milk
  • 0.75 cup white sugar
  • 0.5 cup baking mix
  • 0.25 cup unsalted butter, softened
  • 4 large eggs
  • 1.5 teaspoons vanilla extract
  • 1 cup flaked coconut
Instructions:
  • Collect all the necessary ingredients. Preheat the oven to 350 degrees F (175 degrees C) and grease a 9-inch pie plate.
  • In a blender, blend milk, sugar, baking mix, butter, eggs, and vanilla on low speed for 3 minutes until smooth.
  • Pour the mixture into the pie plate and allow it to rest for 5 minutes. Sprinkle a layer of coconut on top.
  • Bake in the preheated oven for around 40 minutes, or until a toothpick inserted into the center comes out clean. Serve warm.
