Decadent eggnog and coconut custard pie without the crust.
Ingredients:
  • 2 cups eggnog
  • 1.5 cups coconut flakes
  • 0.5 cup all-purpose flour
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon ground nutmeg
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 10-inch pie plate.
  • Combine eggnog, coconut flakes, sugar, flour, eggs, butter, and vanilla extract in a blender until smooth. Pour the mixture into a pie plate, then dust with nutmeg.
  • Bake in a preheated oven for around 45 minutes or until the center is fully set.
  • Allow the pie to cool at room temperature until the pie plate has cooled. Then, refrigerate the pie until fully chilled, for at least 30 minutes.
