Impossibly Easy Chocolate-Coconut Pie

Indulgent chocolate-coconut pie made effortlessly with Bisquick® mix - ideal for a decadent dessert.
Ingredients:
  • 2 cups milk
  • 1/4 cup butter or margarine, softened
  • 3 oz unsweetened baking chocolate
  • 1 cup coconut
  • 3/4 cup sugar
  • 1/2 cup Original Bisquick™ mix
  • 1 1/2 teaspoons vanilla
  • 3 eggs, slightly beaten
  • 1 cup Cool Whip frozen whipped topping, thawed
Instructions:
  • Preheat the oven to 350°F. Grease a 9-inch glass pie plate with cooking spray. In a 3-quart saucepan, gently melt chocolate with milk and butter over medium heat for 5 to 7 minutes, stirring frequently, until smooth; then, remove from heat.
  • In a medium bowl, whisk together the chocolate mixture and all remaining ingredients except the whipped topping until smooth. Pour the mixture into a pie plate.
  • Bake for 40-45 minutes or until a knife inserted in the center comes out clean. Let it cool for 30 minutes, then refrigerate for at least 2 hours until chilled. Top with whipped topping and store in the refrigerator.
