Irresistible rainbow dessert slices for all ages, impossible to resist!
Ingredients:
  • 12 Weet-Bix, finely crushed
  • 32.50 gm cocoa powder, sifted
  • 135.00 gm brown sugar
  • 200g butter, melted
  • 42.50 gm desiccated coconut
  • 1 egg, lightly beaten
  • 150g tub rainbow choc chips
  • 450.00 gm icing sugar mixture
  • 20.00 gm cocoa powder, sifted
  • 62.50 gm boiling water
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grease an 18cm x 28cm slice pan and line it with baking paper, leaving a 3cm overhang on all sides.
  • In a bowl, mix together Weet-Bix, cocoa powder, sugar, butter, coconut, and egg. Press the mixture evenly over the base of the prepared pan. Bake for 15 to 20 minutes or until it feels firm to the touch.
  • Prepare the icing by mixing icing sugar and cocoa powder in a bowl. Pour in boiling water and mix well. Spread the icing over the base using a hot knife. Sprinkle chocolate chips on top and press them into the icing gently. Allow it to set for 2 hours until firm. Cut into squares and serve.
