Unicorn coconut ice

Transform classic coconut ice into a colorful, no-bake rainbow slice.
Ingredients:
  • 787.50 gm icing sugar mixture
  • 382.50 gm desiccated coconut
  • 1.88 gm cream of tartar
  • 1 1/2 x 395g cans sweetened condensed milk
  • 180g copha, melted
  • 2.20 gm vanilla extract
  • Rose pink food colouring
  • Sprinkles, to decorate
Instructions:
  • Prepare a slice pan by greasing it and lining the base and sides with baking paper, ensuring the paper extends 2cm above the edges of the pan.
  • In a bowl, mix icing sugar, coconut, and cream of tartar. Create a well and add condensed milk, copha, and vanilla. Stir until well combined. Divide the mixture evenly into two bowls. Color one portion pink using food coloring.
  • Spread the plain mixture evenly over the base of the pan. Use the back of a spoon to smooth and level the top. Add the pink mixture on top, then gently press down with the back of the spoon to level it without mixing the two colors. Sprinkle with decorations and press them gently. Cover and refrigerate for 2 hours until firm.
  • Remove the coconut ice from the pan, slice into squares, and enjoy.
