Pancake shaker impossible quiche recipe

Introducing the magical Impossible Quiche - three layers of deliciousness in one: savory base, cheesy ham center, and golden zucchini top. Remember to cool for an extra 30 minutes for perfection!
Ingredients:
  • 4 eggs, lightly whisked
  • 375ml (1 1/2 cups) milk
  • 50g butter, melted
  • 180g (1 cup) original (plain) pancake mix
  • 1 zucchini, coarsely grated
  • 100g double smoked leg ham, coarsely chopped
  • 70g (2/3 cup) coarsely grated cheddar
  • 2 green shallots, thickly sliced
Instructions:
  • Preheat your oven to 200C/180C fan forced and grease a 19cm (base size) 1.5L (6 cup) pie dish.
  • In a large bowl, combine eggs, milk, butter, and pancake mix. Season to taste.
  • Drain zucchini in a colander, gently press to remove excess liquid. Spread zucchini, ham, cheddar, and shallot on the bottom of the pie dish. Pour in egg mixture. Bake until golden and lightly set, for 40-45 minutes.
  • Allow the quiche to rest for 30 minutes to reach the perfect serving temperature before enjoying.
