Transform this traditional Mexican dish into a simple and delicious casserole by layering canned chiles with cheese and eggs before baking.
Ingredients:
  • 2 (4-oz.) cans whole green chiles, drained
  • 6 oz. (1 1/2 cups) shredded Mexican cheese blend
  • 3/4 cup Original Bisquick™ mix
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups milk
  • 3/4 cup thick & chunky salsa
Instructions:
  • Preheat the oven to 400°F. Grease a 9-inch glass pie pan with nonstick cooking spray. Cut the chiles lengthwise, remove the seeds, and place them in a single layer at the bottom and up the sides of the pie pan. Sprinkle 1 cup of cheese over the chiles.
  • In a medium bowl, whisk eggs, baking mix, garlic powder, and milk until well blended. Pour the mixture over the cheese.
  • Bake at 400°F for 25-30 minutes or until a knife inserted in the center comes out clean. Sprinkle with the remaining 1/2 cup of cheese. Allow to stand for 5 minutes before serving. Serve with salsa and, optionally, sour cream.
