Cheesy spinach quiche with herbed feta and Cheddar in a deep-dish pie crust. Packed with veggies for a delicious bite.
Ingredients:
  • 1 small onion, chopped
  • 3 cloves garlic, chopped
  • 1 (4.5 ounce) can mushrooms, drained
  • 1 (6 ounce) package herb and garlic feta, crumbled
  • 1 (8 ounce) package shredded Cheddar cheese, divided
  • 1 deep-dish pie shell
  • 1 cup milk
Instructions:
  • Preheat the oven to 375°F (190°C) to get it nice and toasty for cooking.
  • In a medium skillet over medium heat, melt butter. Cook onion and garlic until lightly browned, about 7 minutes.
  • Incorporate fresh spinach, savory mushrooms, rich feta, and 1/2 cup of sharp Cheddar. Season generously with salt and pepper. Transfer the flavorful mixture into the pie shell.
  • In a medium bowl, combine eggs and milk by whisking until smooth. Season generously with salt and pepper. Pour the mixture over the spinach in the pie shell, ensuring it blends well with the spinach.
  • Bake in the preheated oven for 15 minutes. Sprinkle the remaining Cheddar on top and bake until the center is set, about 35 to 40 minutes. Let it cool for 10 minutes before slicing and serving.
