Delightful veggie tarts - perfect for parties and kids!
Ingredients:
  • 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
  • 2 slices bacon
  • 4 medium green onions, chopped (1/4 cup)
  • 2 eggs
  • 1/2 cup half-and-half
  • 1/3 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1 box (9 oz) frozen chopped spinach, thawed and squeezed to drain
Instructions:
  • Preheat oven to 375°F. Take the pie crusts out of the pouches and place them flat on your work surface. Use a 2 1/2-inch round cutter to cut out 12 rounds from each crust. Gently press one round into the bottom and up the sides of each of the 24 ungreased miniature muffin cups. (You can also use a 12-cup tartlet pan if available, refer to How-To tip.)
  • In a 10-inch skillet over medium heat, crisp up the bacon for 4 to 6 minutes until golden and crunchy. Remove and drain on paper towels. Using the same skillet, sauté the onions in the flavorful bacon drippings for 2 to 3 minutes until soft and fragrant. Drain any excess liquid.
  • Whisk together eggs, half-and-half, cheese, salt, and nutmeg until well combined. Crumble bacon and mix into the egg mixture. Stir in onions and spinach until evenly distributed. Spoon mixture into the crust-lined cups evenly.
  • Bake for 20 to 25 minutes, or until puffed and golden brown. Allow the quiches to cool in the pan on a wire rack for 10 minutes, then gently loosen and remove them using the tip of a knife. Serve warm or cold and store any leftovers in the refrigerator.
