Spinach dip pastries

Try quick and delicious spinach dip pastry bites; customize with ham, bacon, or tuna.
Ingredients:
  • 250g cream cheese, chopped, at room temperature
  • 150g thawed frozen spinach, excess moisture removed
  • 1 garlic clove, crushed,
  • 20g (1/4 cup) shredded parmesan, plus extra to sprinkle
  • 65g (1/4 cup) sour cream
  • 2 sheets frozen puff pastry, thawed
Instructions:
  • Preheat the oven to 180C/160C fan forced, then grease a 24-hole mini muffin pan. In a bowl, mix together cream cheese, spinach, garlic, parmesan, and sour cream until well combined. Season to taste.
  • Cut each sheet of pastry into 12 squares. Gently press a pastry square into each mini muffin hole, fill with spinach mixture, sprinkle with extra parmesan, and bake for 20-25 minutes until pastry is golden and crisp.
