Savory spinach and cheese quiche without the crust.
Ingredients:
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1 bunch green onions, finely chopped (white parts only)
  • 4 eggs, beaten
  • 1 (16 ounce) package cottage cheese
  • 2 cups shredded Cheddar cheese
  • 0.25 cup crushed croutons
Instructions:
  • Preheat your oven to a comforting 325 degrees F (165 degrees C) and give a gentle grease to a 9 inch pie or quiche pan.
  • In a small saucepan, wilt the spinach over medium heat, stirring occasionally. Remove any excess liquid. Mix in green onions, eggs, cottage cheese, and Cheddar cheese. Transfer the mixture to a prepared pan.
  • Bake in a preheated oven for 45 minutes until done. Sprinkle with crushed croutons and bake for 15 more minutes until eggs are set.
