Savory chicken quiche with flaky pie crust, spinach, sweet onion, eggs, creamy half-and-half, and zesty mayonnaise - perfect for brunch.
Ingredients:
  • 1 cup shredded Cheddar cheese
  • 1 (9 inch) unbaked pastry shell
  • 1 cup diced cooked chicken
  • 1 cup chopped fresh spinach
  • 0.5 cup chopped sweet onion (such as Vidalia®)
  • 3 large eggs
  • 0.75 cup half-and-half
  • 0.5 cup mayonnaise
  • 0.125 teaspoon ground black pepper
  • 1 pinch salt-free seasoning blend (such as Mrs. Dash), or to taste
  • 1 pinch herbes de Provence, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Layer 1/4 cup of Cheddar cheese into pastry shell. Combine chicken, spinach, the remaining 3/4 cup of Cheddar cheese, and onion in a medium bowl, then transfer the mixture into the pastry shell.
  • Combine eggs, half-and-half, mayonnaise, salt, black pepper, seasoning blend, and herbes de Provence in a separate medium bowl until fully mixed; then pour over the chicken mixture.
  • Bake in the preheated oven for 35 to 40 minutes or until a knife inserted into the center comes out clean. Allow it to rest for 15 minutes before slicing and serving.
